Who I am

My name is Marco De Donno and I welcome you to my laboratory.

Born and raised in the family pastry shop, I have always watched with interest my grandfather and my uncle working the almond paste and chocolate creating wonderful desserts.
During my studies I deepened my passion and immediately after graduation I left, touring Italy, to make pastry making my profession. Over the years I have had the opportunity to work alongside professionals in the sector, both national and international, refining my technical skills and my manual abilities.

In 2021 I started the project "Essence: Easy Pastry Tools" with the aim of giving shape to the ideas of Pastry Chefs and Chefs or anyone who wants to experiment with new ways of expressing their culinary art.

I enjoy experimenting as much as possible with new techniques of preparation, execution and decoration of Pastry and Catering products, trying to bring to the extreme what can be the customization and taste of each product according to the needs of the customer.


My idea of modern pastry making is based not only on trying to make a product as pleasant as possible, but on contextualising each of its elements: the name, the themed decoration and its ingredients.

With my new project I hope to help professionals in the sector to develop their ideas more easily through my skills.
