Who I am

My name is Marco De Donno and I welcome you to my laboratory.

Born and raised in the family pastry shop, I always watched with interest my grandfather and uncle as they worked with almond paste and chocolate, creating wonderful desserts.
During my studies, I deepened my passion, and immediately after graduation, I set out, traveling throughout Italy, to make pastry making my profession. Over the years, I've had the opportunity to work alongside industry professionals, both national and international, honing my technical skills and manual abilities.

In 2021, I launched the "Essence: Easy Pastry Tools" project with the aim of giving shape to the ideas of pastry chefs and chefs or anyone who wants to experiment with new ways of expressing their culinary art.

I enjoy experimenting with as many new techniques as possible for preparing, executing, and decorating pastry and catering products, striving to push the limits of customization and the flavor of each product to meet the customer's needs.


My idea of modern pastry making is based not only on trying to make a product as pleasant as possible, but on contextualising each of its elements: the name, the themed decoration and its ingredients.

With my new project, I hope to help industry professionals develop their ideas more easily through my skills.
